Ingredients:

  • 2 acorn squashes, halved and seeds removed
  • 2 tablespoons melted butter or olive oil
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper, to taste
  • Optional: a sprinkle of brown sugar

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds and fibrous strands from the center.
  3. In a small bowl, mix together the melted butter or olive oil, maple syrup or honey, ground cinnamon, ground nutmeg, salt, and pepper.
  4. Brush the inside and edges of each acorn squash half with the mixture, making sure to coat them evenly. You can also drizzle the mixture over the squash if you prefer.
  5. Place the acorn squash halves on a baking sheet, cut side up.
  6. Optional: Sprinkle a bit of brown sugar over each squash half for added sweetness.
  7. Roast in the preheated oven for about 30-40 minutes or until the squash is fork-tender and the edges are caramelized.
  8. Remove from the oven and let them cool for a few minutes before serving.
